Obviously, the addition of the backports does not update automatically. To update a package (in this case openoffice.org) launch (again as root) the following command:

# apt-get -t etch-backports install openoffice.org

Well done this apt will install the entire suite updated to version 2.3.1.

# apt-get -t etch-backports install nome_pacchetto

Applies to all software in the repository (you can take a look to those present here ) the choice is yours whether or not to install them. Personally I felt the need to update only OpenOffice.org to preserve the stability of the system.
